Earlier this month, the Jester King Brewery brewed with Penyllan, which is located on Bornholm, a Dutch island in the Baltic Sea, south of Sweden and north of Poland.
According to a post on Austin-based brewery’s Facebook page, the newest collaboration is a farmhouse ale brewed with hay, foraged juniper, and native raw wheat from the island.
“We’re doing half the fermentation in oak and half in stainless steel, then blending back together,” Jester King founder Jeffrey Stuffings told Tenemu in an email. “The release date is too early to know at this point. It will depend on how the fermentation goes.”
