The Rare Barrel, the all-sour beer company based in Berkeley, Calif., is releasing its first Echo Series beer, Hypnotized, in bottles and on draft, in the tasting room today, April 14.

Hypnotized is a sour red beer, coming in at 3.30 pH and aged in oak barrels with raspberries. The oak barrels are originally filled with the brewery’s Ensorcelled, a raspberry sour dark beer. The yeast used in Hypnotized is a strain of brettanomyces, with additional tartness from the bacteria, lactobacillus. Hypnotized was bottled in 750ml bottles on Jan. 6, 2o16 and weighs in at 5.8 percent ABV.

It is the first of the Echo Series beers to be released. The Echo Series is an experimental series of beers that allows the production team at The Rare Barrel to use residual yeast, fruit, and even beer in old barrels to flavor and accent new beers that are then aged in those barrels.

Hypnotized will be available starting at 4 p.m. Bottles will be limited to two per person and are $23.
