Once again, three top breweries have joined forces to help an animal sanctuary in Minnesota.
According to filings with the Alcohol and Tobacco Tax and Trade Bureau (TTB) St. Louis-based Perennial Artisan Ales, Side Project Brewing and Chicago-based Off Color Brewing have collaborated on ProCATStination, an 8.5 percent ABV wine-barrel aged wild ale brewed with pils, Vienna and spelt malts as well as Kazbek and nugget hops. The ale was brewed at Off Color and was conditioned on barrel lees from the barrels that the 2015 version of ProCATStination aged in.
As was the case last year, the new beer is being brewed exclusively for Lions, Tigers and Beers, an annual fundraiser that benefits the Wildcat Sanctuary in Minnesota. This year’s event will be held at Northdown Cafe & Taproom in Chicago on June 10. Last year’s incarnation of ProCATStination was a 6 percent ABV Belgian-style saison that has been aged in wine barrels, and brewed at Perennial Artisan Ales.
The new limited release will be packaged in 750ml bottles.
