Six months after Jester King Brewery sold the first three SPON variants, two more have been announced.
The first new variant is SPON Blueberry & Pitaya, a 5.7 percent ABV blend of two-year-old 100 percent spontaneously fermented ale that has been refermented with both blueberries and pitayas, which is also known as dragonfruit. According to Jester King, although the front label reads “blended on FEB 02 2017”, that was actually the bottling date.
In addition, the Austin-based brewery will be releasing SPON Albarino & Blanc du Bois, a 6.7 percent ABV blend of two-year-old 100 percent spontaneously fermented beer refermented on albarino & blanc du bois grapes that was packaged on Sept. 26, 2016.
In November 2016, Jester King debuted its first 100 percent spontaneously fermented beer named 2016 SPON — Méthode Gueuze, a blend of one-, two- and three-year-old 100 percent spontaneously fermented beer that was made using the same traditional method that produces authentic Belgian gueule. The brewery followed that in December with the release of three different variants: 2016 SPON — Raspberry & Cherry, 2016 SPON — Peach & Apricot and 2016 SPON — Flor.
According to a post on Jester King’s website, both SPON Blueberry & Pitaya and SPON Albariño & Blanc du Bois will be packaged in 375ml bottles ($25) and will have a three bottle per person per day purchase limit when they go on sale on June 30. Each variant will have approximately 2,700 bottles available.
