Earlier today, Austin, Texas-based Jester King Brewery announced its newest release, Snörkel.
The new beer is a farmhouse ale brewed with alder wood smoked sea salt and oyster mushrooms grown at Logro Farms, located right next to the brewery at Ceres Park Ranch. The mushrooms were actually fertilized by spent grain from Jester King, who now uses the mushrooms to brew more beer in a circle of life moment between two neighbors.
For Snörkel, Jester King started with a gose-style base, before adding its locally-sourced ingredients.
“We specifically used both sea salt and Alderwood smoked sea salt, and fermented Snörkel (like all our beer) with a blend of brewers yeast, naturally occurring wild yeast, and native souring bacteria, the last of which lends the beer its acidity,” said the brewery in a press release. “We set out to explore the savory characteristics of umami through the use of the oyster mushrooms.”
The end result is a relatively light 4.5 percent ABV, although it’s not surprising given the go style and Jester King’s track record.
Snörkel will be released at the Jester King Brewery on Aug. 15 at 4 p.m., and there will be a limit of three per customer per day. Each beer will sell for $12 and only about 3,000 bottles were produced for the first batch, but there will be a second batch that will be made later in the summer, and bottles from that release will be partially distributed.
