This past Saturday, Ballast Point Brewing Co. released its third in its Limited Release Barrel Aged Beer Series with Willett Bourbon Barrel Aged Sea Monster.
While Ballast Point has been aging beer for over 15 years, its official barrel program started in 2012. It has grown to include over 650 oak casks with 25-30 different styles of beer being aged in 10 to 15 different oak casks.
At 12.2 percent ABV, the brewery says this beer has a distinct bourbon character with notes of vanilla, dark fruit, oak tannins, and dark chocolate. Sea Monster is an imperial stout that normally comes in at 10 percent ABV. For the barrel-aged version, the beer spent 11 months in barrels previously used by Kentucky Bourbon Distillers, best known for its Willet bourbon and rye.
The beer was limited to two 750ml bottles per person.
